Hurricanes?!

But if you mean a rare study rather than a rare event then you could measure
the ozone above the UK.

Other less exotic studies are soil temperature, pan evaporation, and lunar
luminesence due to the Earth's albedo.
The spectrum of back radiation from the greenhouse effect (it should be
increasing due to global warming) is one that interests me at the moment.

If you care to elaborate on which aspects of weather you find most interesting
then I am sure we could think up a project for you.
