Well, it didn't work for her Coronation in 1953 - IIRC it turned out to be
one of the coldest June days on record? 
And the Silver Jubilee in 1977 was also pretty dire.
Don't recall the weather at Golden Jubilee in 2003
so it probably wasn't anything out of the ordinary.

I think the Saturday (particularly) and the Sunday were notably good -
a short hot spell in a pretty dire May/early June - then the Mon and
Tues were both cool and cloudy, but dry, following a cold front. This
is for Hampshire.
It's lucky it was changed that year, as the "normal" May bank holiday
weekend was dire to say the least IIRC. Of course, what will probably
happen this time is following a good last weekend and good this
weekend, Easter and the Royal Wedding/May Day holiday will both be
cool and changeable!
