Please can anyone recommend a book which explains weather systems and
methods of recording/interpreting data?

Have a look in the Books section of the excellent uk.sci.weather FAQ:

.... 5A.14, although entitled "Meteorology and Flight" would on the face
of it fit the bill.

You might like to review the publications available via the Royal
Meteorological Society at:-

Incidentally (for anyone to contribute), this section (5A) has been
built up in a rather haphazard way - I don't have the resources to
review all new publications that cover the request made above: I would
like to add to the list with this specific 'market' in mind (i.e. good
quality, 'starter' books), so please let me know with a brief review
(see the FAQ for the idea of this latter), publisher/author name etc.,
and I can add it in.

Martin.
