It snowed one year when I was on holiday there. We drove up the mountain
hoping to get to the top of the volcano but the ski lift was closed because
of ice. The snow line was about 1800m that day. It was 20C at sea level.

That sounds fairly similar to my experience when I went there in January 1978. Similar snow level.
We went to the top of El Teide which was above the weather and I'd guess the temperature was about -3°C with very strong sunshine, the sky not so much blue as black. I got quite a red face in half an hour. Pressure about 645 mb so that 35mm film canisters opened with quite a pop. The top of El Teide is 3717 m, 12195 ft.
