Default Why the long journey?

Why is it that most cities have bus routes that are in a radial pattern,
with the central point being the city centre?

If I want to get to a place on the same side of the city, I have to go
into the city centre and then come back out again.

It'll be much better with some circular routes joining together the
radial routes to give a spider web pattern. It would make for quicker
journeys on the same side of the city.

Because that's where most people want to go?

It might just be quicker to walk, depending in the size of the city?

Coventry has a 360A and 360C service which takes a roughly circular route, covering the main hospital, outer suburbs, business parks, colleges and university (of Warwick - not actually in Warwick). The route numbers are self-explanatory.
