Very neat time lapse videos!

And now my question-does anyone know of software which would create
timelapse sequences from video from my mini DV camera? Such as by saving
every 10th frame or something similar? I have software that will play back
a series of jpgs in various ways but since I have been recording trips
around the local mtns on my motorcycle I thought it might be neat to speed
things up so to speak. And of course I'd shoot some clouds too.
