Given that the sun is below the horizon there 24/7 at this time of year,
I wonder if there is any regular pattern to the time of maxima & minima,
or if it's totally dependant on the vagaries of the passing weather?

I think all you can really say is:
- any rise must be due to advection from a warmer source.
- any fall may be due to either advection from a colder source or
local radiative cooling - or most likely a mixture of both.

Key point being that rises must be advection-driven (no solar
heating) - which indicates a dependence on the passing weather.
