Why, when it is hot and I want to find out how hot it is the Met
office site is always 6 hours behind.

Why, when I want to ride home from work and I want to know if I am
likely to get rained on is BBC rainfall radar always 3 hours
behind.....

It isn't behind, not here anyway (times in GMT):

Latest data 1400 GMT (1500 BST), the 1500 GMT data should be available
within the next few minutes.
